Step 1
Cook onions, celery, and carrots in olive oil and butter heated in Dutch oven. Once softened, add potatoes and cook for 1 minute. Then add garlic and ginger and cook for 1 minute.
Step 2
Add flour, and cook for 1 minute. Add remaining seasonings. Deglaze the pot with beef broth. Add water as needed. Add salt as needed.
Step 3
Cook on medium high heat for 30 minutes. Check to make sure potatoes and carrots are done.
