Instructions
Step 1
Whisk the egg yolks and the sugar together until a bit fluffy.
Step 2
Add the mascarpone and stir very well.
Step 3
Whisk 4 egg whites. Add them to the previous mixture.
Step 4
Dip the biscoff cookies in the coffee and place them first.
Step 5
Pour over some of the mascarpone mixture. Top up with cookies and alternate with the mixture, finishing with the mascarpone mixture.
Step 6
Place in the fridge for several hours until set. Drizzle some cacao powder or crush a cookie on top if you want before serving.
