Lemon curd
Instructions
For the lemon curd
Step 1
Put all ingredients for the lemon curd in a pot and cook it over medium-low heat whisking constantly.
Step 2
Keep whisking for about 5min until the mixture thickens.
Step 3
Now transfer the lemon curd to a fine-mesh strainer and strain the mixture from any unnecessary lumps.
Step 4
Cover the bowl with a plastic wrap and let it cool for 20-30min.
For the cream
Step 5
Add to a large mixing bowl the heavy cream, vanilla extract, lemon zest, lemon curd, lemon juice and sugar. Mix it with a hand mixer until well combined.
Step 6
Add the mascarpone to the bowl and mix on low speed until the mixture is smooth.
Step 7
Now dip the ladyfingers in the limoncello and place them on the bottom of your container.
Step 8
Top the ladyfingers with the cream and do it all over again.
Step 9
Finally pour the rest of the lemon curd on top of your tiramisu. Let it in the refrigerator overnight and enjoy!
