Step 1
Using a blender or food processor add 1/4 cup of lime juice, canned peppers (or peppers of your choosing based on your heat tolerance), garlic cloves, cumin, coriander, smoked paprika, chili powder, oregano, apple cider vinegar, water, extra virgin olive oil, salt and pepper. Blend or process until smooth.

Sauce and Chicken
Step 2
In a large bowl, add the chicken and the freshly made sauce. Really mix in the marinade so the chicken is well coated.

After well mixed, cover and refrigerate for a minimum of 4 hours.

Heat the oven to 425 °. On a large baking sheet, add olive oil and spread around. Place chicken on baking sheet ( it is okay that they touch), add any remainder sauce from the bowl and Salt and pepper. Bake for 25 min. or until internal temp is 170° F.

After cooked remove from oven. Set the oven to broil, place back in the oven for 3-5 minutes.

Let chicken cool and then cut into strips or cubes and serve with rice.
