Step 1
Place chicken in a bowl and pour over buttermilk, reserving 1 tablespoon. Turn to coat, cover and refrigerate for 20 minutes.
Step 2
Preheat oven to 200°C and line a baking tray with baking paper. Combine breadcrumbs, chicken coating and cajun spice in a bowl.
Step 3
Lightly shake excess buttermilk from chicken and coat well in breadcrumb mixture. Place chicken onto prepared tray. Spray with oil and bake for 15 minutes. Reduce oven temperature to 180°C and bake for a further 15-20 minutes or until golden and crisp.
Step 4
Meanwhile, combine cabbage, carrot and apple in a bowl. Mix reserved buttermilk with mustard. Drizzle over salad and toss to combine. Season with freshly ground black pepper. Serve chicken with salad.
