Instructions

Step 1
In a saucepan, place egg yolks, milk and whisk well to combine everything well. Cook the mixture over medium flame for about 10 minutes until it thickens, place the glucose and mix. Let the mixture cool in the refrigerator.
Step 2
To make the mango puree, place four medium size mango chunks , lemon juice and granulated sugar. Cook them over medium high flame until the mango is softened then blend the mango to get rid of any chunks. Pass the puree through a sieve. Let the puree cool down in the refrigerator. Reduce the sugar into half If you use a readymade mango puree.
Step 3
In a large bowl whisk the heavy cream until it slightly thickens. Place the condensed milk, vanilla extract, salt, yellow food color, mango puree, and yolk mixture. Mix everything well with a whisk. Place the ice cream mixture in a container and let it sit in the freezer. After two hours whisk the mixture to break the ice crystals, and place it back in the freezer. Keep repeating this process after every two hours for 3-4 times. Let the ice cream sit overnight.
Step 4
Before eating the ice cream, let it sit at room temperature for 5-7 minutes and enjoy the ice cream with some fresh mango, and mango puree.
