chop up the veg, put the chicken thighs on the veg and sprinkle with salt and pepper. add some sprigs of fresh rosemary and tuck in around the chicken. Put a bit of olive oil in the chicken skin to give a crispy skin. I added some white wine to give it a bit more flavour and juice. you could use fruit juice if preferred. I think I cooked it for about an hour in a hotish oven . I haven't made it for a while so am a bit vague about the quantities. A 500g bag of frozen veg would do about 2-3 people.
