Instructions
Step 1
Pre heat oven to 350 degrees. Oil a 9x3 loaf pan. Use parchment paper to line the bottom and sides of the pan.
Step 2
Zest 2 of the lemons and add 1 cup of greek yogurt, and 2/3 cup honey.
Step 3
Using an electric hand mixer whip the yogurt, honey, and lemon zest until light and fluffy.
Step 4
Beat in the apple sauce. Continue mixing until the mixture is even lighter and fluffier.
Step 5
In a seperate bowl whisk together the almond flour, baking powder and salt.
Step 6
Add half of the dry ingredients to the greek yogurt mixture beat on low speed until smooth
Step 7
Add the milk to the greek yogurt mixture and add rest of dry ingredients
Step 8
Add the batter to the 9x3 loaf pan and bake at 350 for 45-55 minutes
Step 9
let cake cool fro about 10 minutes. poke 10-15 evenly spaced holes pour in remaining lemon juice over the cake
