If your kids don't like carrots, mushrooms or onions, you can actually use a ninja or other choppy device to make these so small they aren't visible ;) Original recipe has pearl onions but they are a pain, and won't matter anyways if you're blending them up. You can also add celery to the blended veggies and any type of potato (either baby or cut into large chunks)

Instructions
Step 1
Simmer bacon in water (or just cook in skillet till browned). Dry beef and sprinkle with salt & pepper.

Sear beef cubes in bacon drippings (or oil for a healthier dish) over med-high heat on all sides (may need to do this in batches). Put beef cubes in crock pot.
Step 3
Pour wine in pan to cover the bottom and simmer in between batches to deglaze the pan and scrape off all the good bits stuck on the bottom, then pour into crock pot.
Step 4
Once beef is seared, in the same pan over med-high heat add 2 TBSP oil and saute carrots, onions and garlic until soft (5-10 mins). Add tomato paste and cook till fragrant (1-2 mins). Transfer to the slow cooker and stir the beef, veggies and bacon together. Add a pinch of salt. Put thyme and bay leaf on top.
Step 5
Pour remaining red wine into slow cooker. Add chicken broth until liquid covers 3/4 of meat.
Step 6
Cover the crockpot and cook on low 6-8 hours. (Beef should fall apart with a fork)
Step 7
2 hours before end of cooking add the mushrooms and stir in.
