Ingredients

1 Β½ cupssalted butter
softened
1 Β½ cupssugar
3eggs
3 tspvanilla
3 tspbaking powder
4 Β½ cupsAP flour
ΒΌ cupcanola oil
20oreos
broken into med.-sized pieces
1 cupwhite chocolate chips
Β½ cupsalted butter
softened
3 cupspowdered sugar
1.5 Tbspmilk
for consistency
6oreos
finely chopped
ΒΌ tspmint extract
blue food coloring
Instructions
Preheat oven to 350Β°F
Step 1
Cream together butter & sugar (1 min.) until light & fluffy. Add eggs & vanilla; mix until thoroughly combined.
Step 2
Add flour & baking powder; mix until dough forms. Add oil; mix until fully incorporated.
Step 3
Fold in Oreo pieces & white chips until evenly distributed in dough.
Step 4
Scoop a generous 1/3 cup of dough for each cookie. Roll each cookie into a ball & then flatten slightly. (Cookies will spread slightly while baking.(
Step 5
Bake (13-16 min.) The cookies should spread & centers of cookie should look dry & baked, no longer glossy & wet like unbaked cookie dough.
Step 6
Cool cookies complexity on baking sheet.
Aggie Blue Mint Frosting
Step 7
Once cookies have cooled, make frosting by first creaming butter until it is nice & smooth.
Step 8
Add powdered sugar one cup at a time, mixing until it combines with the butter. You will need to add in a little bit of milk (think a few tsp at a time) while mixing in the powdered sugar to keep it a good frosting consistency.
Step 9
Once all powdered sugar has been incorporated, fold in finely chopped oreos & mint extract; mix until well-combined.
Step 10
Stir a few drops of blue food coloring at a time by hand until you've reached your desired color. (I usually use about 5 drops of food coloring.)
Step 11
Frost each cooled cookie by spreading the frosting onto the top.
Step 12
Chill cookies in the fridge (30 min.) before serving. Serve chilled.
