Ingredients
9 servings
1 cupbanana
mashed prox s
1 cupcarrot
grated
⅓ cupmaple syrup
3 Tbspground flax
1 flax eggs, mixed with
water
½ cupmilk
1 tspapple cider vinegar
1 cupalmond flour
½ cupoat flour
or protein powder
½ tspbaking soda
½ tspbaking powder
½ tspcinnamon
¼ tspground ginger
½ tspsea salt
½ cupchopped walnuts
icing
½ cupcashews
soaked
½ cupcoconut cream
¼ cupsweetener
I used monk fruit
¼ tspvanilla
Instructions
Step 1
Pre heat oven to 180C/350F.
Step 2
Prepare the flax egg.
Step 3
Add all the wet ingredients into a bowl and mix to combine.
Step 4
Add in the dry ingredients and fold to combine.
Step 5
Lastly fold through the walnuts.
Step 6
Transfer to a lined brownie dish.
Step 7
Bake in the oven for 20-35 minutes until golden.
Step 8
Leave to cool to room temp.
Step 9
Add all the icing ingredients into a blender/food processor and blend until smooth.
Step 10
Top the carrot slice with the icing and top with the more walnuts and cinnamon. ENJOY!
