Ingredients

2 Tbsolive oil

1onion
large, diced

4stalks celery
chopped thin

¾ cupcarrot
shredded

3cloves garlic
minced

1bay leaf

¼ cupparsley
chopped

8 cupschicken stock

1 lbground chicken
or turkey

2 handfulsgrated parmesan Romano cheese

2 handfulsItalian style breadcrumbs

1egg
beaten with a little water

1 pinchnutmeg

1 packagefrozen tortellini

salt
to taste

pepper
to taste

cheese
grated, to garnish
Instructions
Step 1
Make small, walnut-sized meatballs by mixing ground chicken, grated cheese, breadcrumbs, egg, nutmeg, salt & pepper
Step 2
Heat olive oil in large pot. Saute onion, carrots, celery, and garlic until tender.
Step 3
Add bay leaf, parsley, stock, salt, and pepper and bring to a simmer.
Step 4
Drop meatballs into simmering stock. Simmer for 45 min to 1 hour. During last 3 minutes, add tortellini. When tortellini come to top, they are done. Remove from heat.
Step 5
Serve with grated cheese
