Ingredients
8 servings
1 lbItalian sausage
I used sweet sausage
2 Tbspolive oil
1 tspitalian seasoning
1 ½ cupssweet onion
yellow
1carrot
diced
2 Tbspminced garlic
½ tspsalt
½ tsppepper
2 Tbspall purpose flour
1 x 10 ouncecan diced tomato
can, i used redgold diced / crushed
7 cupschicken stock
10 oz3 cheese tortellini
i used buitoni - i like the bite sized ones
4 cupskale
no stems, or spinach
3 Tbspfresh basil
1 cupheavy cream
Instructions
Step 1
In a large pot or Dutch oven, heat up the oil and cook the Italian sausage (removed from casing). Cook for 3-4 minutes and drain the excess oil. Add Italian seasoning, garlic, onion, carrot, salt and pepper then cook for a few minutes. Add flour and cook for 1-2 minutes and add the chicken stock. Bring to a boil, then cover and simmer for 10 minutes. Add tortellini and cook for 5 minute then add in kale, basil and heavy cream. Cook for another 2 minutes.
Step 2
Serve with crusty buttered French bread! Top with parmesan and red pepper flakes.
