Step 1
Chop the onion and capsicum. Drain the beans.

In a frying pan, heat a drizzle of oil on high. Add the onion and cook for 2-3 minutes until softened.

Add the mince and cook until browned.

Add the capsicum and seasoning, and cook for a further 2-3 minutes.

Add the beans and tomatoes, and leave to simmer for about 10 minutes.

Set the oven to grill and pre-heat on high.

Prepare your enchiladas by adding a spoonful of filling to a tortilla and rolling it up carefully placing it in an oven proof dish. Do this with all 12 tortilla.

Sprinkle the cheese over the top and then grill until golden brown. Keep an eye on it as it can go quickly from golden brown to black! Serve with coriander.
