Very Healthy Fish Pie made with Butter Bean & Cauliflower Sauce

A favourite in this household and a great way to add in extra vegetables and pulses into the diet of your whole family without them even knowing it! I always double up the ingredients when I make this and freeze the second one before cooking.

Ingredients

White Sauce
400gcauliflower
roughly chopped
0.5tin butter beans
rinsed and drained
30gmargarine
50gplain flour
300mlsemi skimmed milk
350gfish pie mix
frozen sweetcorn
frozen peas
1 tspdijon mustard
3eggs
1kgpotatoes
peeled and halved
15mlsemi skimmed milk
15gbutter
salt
for seasoning
pepper
for seasoning
4carrots
peeled and chopped
1broccoli
cut into 6 pieces
Instructions
White Sauce
Step 1
Remove the leaves and stalk from the cauliflower, chop into big bite size pieces and add to a saucepan and cover with boiling water. Cook for 10-15 minutes or until tender. Drain and then add the butter beans and mash or put into a food processor and blend until smooth-ish.
Step 2
Meanwhile add the butter to saucepan and melt gradually. Add in the flour and stir until combined. Gradually (100 ml at a time) whisk in the milk avoiding any lumps, over a low heat. Cook for 5 minutes until slightly thickened.
Step 3
Add the bean and cauliflower purée to the milk sauce along with the fish pie mix, sweetcorn, peas, mustard and season. Combine well.
Step 4
Place the eggs in a saucepan and cover with water. Bring to the boil and simmer for 12 minutes. Drain under cold running water and remove the shell. Cut in half and set aside.
Step 5
Add the fish pie mixture to a 3L baking dish and evenly space out the cooked eggs on the top. Gently push into the mixture until half immersed.
Mashed Potato
Step 6
Place the potato in a saucepan, pour over enough water to cover them. Bring to the boil and simmer until tender, approximately 15-20 minutes depending on the size of your potatoes.
Step 7
Remove from the heat, drain and mash until smooth. Add 15ml of milk, 15g butter and season with black pepper. And combine well by mashing.
Step 8
Add the mashed potato evenly to cover the top of the fish and egg mixture.
Step 9
Cook in an oven at 20-25 minutes on 180C until golden and bubbling at the edges.
Step 10
Serve with boiled carrots and broccoli or a choice of your vegetables.
