Instructions

Step 1
1. PREP EVERYTHING BEFORE YOU BEGIN!

2. Wash the pork, removing pigment and as much moisture as possible.
Step 3
3. Mix washed pork with marinade, stir vigorously with chopsticks. Leave overnight or while prepping the other ingredients.
Step 4
4. Fill wok halfway with water, bring to a simmer.
Step 5
5. Add marinated pork:
Step 6
a. Separate strips quickly using chopsticks.
Step 7
b. After 20 seconds, remove pork to a baking tray to steam dry.
Step 8
c. Pork should be fully cooked already.
Step 9
6. Wipe out wok, removing all moisture.
Step 10
7. Heat wok over high heat until just smoking, then reduce heat to medium/high.
Step 11
8. Add fat (sesame oil, lard, or butter).
Step 12
9. Add aromatics (garlic, ginger, and pickled chilis).
Step 13
10. Add vegetables (cucumber and scallions).
Step 14
11. Toss to fry.
Step 15
12. Add pork.
Step 16
13. Toss until warm.
Step 17
14. Add sauce, pouring around the outside of the wok.
Step 18
15. Slowly add cornstarch slurry and reduce until sauce is thickened.
Step 19
16. Serve.
