Beef Chop Suey with Beansprouts & Noodles

Ingredients

Marinade
Chop Suey
450gribeye steak
or sirloin, thinly sliced
1 headbroccoli
cut into small florets
2 Tbspvegetable oil
or groundnut
1onion
thinly sliced
2 stickscelery
thinly sliced on the diagonal
225gmangetout
sliced in half lengthways
55gbamboo shoots
fresh, or canned, rinsed and julienned, if using
water
fresh, boil in, first for 30 minutes
8water chestnuts
thinly sliced
225gmushrooms
thinly sliced
1 Tbspoyster sauce
salt
125gbeansprouts
250gEgg Noodles

Instructions
Step 1
Combine all the marinade ingredients in a bowl and marinate the beef for at least 20 minutes.
Step 2
Blanch the broccoli in a large pan of boiling water for 30 seconds. Drain and set aside.
Step 3
In a preheated wok or deep pan, heat 1 tablespoon of the oil and stir-fry the beef until the colour has changed. Remove and set aside.
Step 4
Wipe out the wok or pan with kitchen paper. In the clean wok or deep pan, heat the remaining oil and stir-fry the onion for 1 minute.
Step 5
Add the celery and broccoli and cook for 2 minutes, Add the mangetout, bamboo shoots, water chestnuts and mushrooms and cook for 1 minute.
Step 6
Add the beef, season with the oyster sauce and salt.
Step 7
Add the Fresh Beansprouts and the cooked Noodles stor for 2 minutes over heat and serve
