For the mash:
Step 1
Preheat oven to 180C.
Step 2
Boil all the potatoes in a large saucepan with salted water for 15-20 minutes.

Drain and return to pan with the stock, mash until smooth and season. Stir in parsley.
For the filling:

Brown chicken in saucepan if not cooked previously.
Step 5
Place stock, leeks, garlic, carrots, peas and mushrooms in a saucepan and cook over gentle heat for 12-15 minutes, stirring often.
Step 6
Add cooked chicken if cooked previously to pan and mix well.
Step 7
Add tarragon, season well and cook gently for 3-4 minutes, stirring often.
Step 8
Remove from the heat and transfer to a medium-size dish.
To finish:

Spread mash over the chicken mixture and brush the top with beaten egg.
Step 10
Bake in the oven for 20-25 minutes. Serve with green beans.
