A gourmet version of Turon, a banana lumpia slathered with a cinnamon pineapple molasses syrup topped with sesame seeds and a creamy cinnamon powder.

Ingredients

TURON:
14 piecesSaba banana
ripe, peeled & cut into 4
56lumpia wrappers
square
canola oil
for deep frying
3 tbspsbutter
¼ cupjackfruit
thinly sliced
1 Tbspground cinnamon
BANANARHUMA SAUCE:
2 tbspsbanana flavor
or banana puree
¼ tspbanana essence
1 Tbsplight rum
½ cuppineapple juice
⅓ cupbrown sugar
GARNISH:
Instructions
Step 1
For powdered sugar cinnamon: mix powdered milk, powdered sugar and ground cinnamon together until well combined in a small bowl. Set aside.
Step 2
Wrap all banana with lumpia wrapper, foldclose with water and flour paste. Repeat until you have used up all of bananas.
Step 3
Preheat the oil to 350F. Deep fry all turon until golden brown.
Step 4
Transfer all turon on a paper towel lined strainer to drain the oil.
Step 5
Bananarhuma sauce: Melt butter and cook jackfruit strips over Medium High heat until jackfruit has softened.
Step 6
Add ground cinnamon and stir until well combined. Add banana flavor or puree, banana essence and rum until the alcohol has evaporated.
Step 7
Add pineapple juice snd stir until sauce has reduced to 25% of its volume,and thickened. Add brown sugar and stir until it is melted and well combined.
Step 8
Decrease heat to Medium low, and let the sauce thicken. Toss in the turon, and toss using 2 spatulas to fully coat the turon. While tossing, sprinkle liberally with white sesame seeds.
Step 9
Transfer turon to a plate. Sprinkle more white sesame seeds. Sprinkle the powdered milk cinnamon dust on top.
Step 10
Serve and enjoy as breakfast or a snack.
