Instructions

Step 1
1. Mince shallots and garlic - Start with finely mincing the shallot and garlic clove.

2. Boil Water - Fill a large pot with water. Put a large pinch of salt in the water and place it on the stovetop with high heat.

3. Saute shallots and garlic - In a separate large saucepan, heat the olive oil over medium heat. Add the minced shallot and garlic. Cook until fragrant, about 30 seconds.

4. Add tomato, vodka, and seasonings - Remove the pan from heat and add the tomato paste, vodka, salt, and red pepper flakes. Stir well to coat the shallots and garlic in the mixture.

5. Simmer - Simmer the tomato-vodka mixture over medium-low heat for 15 minutes.

6. Boil rigatoni - During the simmering time, boil the rigatoni per package directions or until al dente, typically around 10-12 minutes. Reserve ¼ cup of pasta water and drain the cooked pasta.
Step 7
7. Add cream and parmesan - After simmering the saucepan mixture for 10 minutes, add and stir in the cream and parmesan. Continue to stir until the parmesan is completely melted in. Then turn the stovetop to low heat. *TIP: if the mixture seems too thick for you, add a little of the pasta water reserve until you are happy with the consistency.

8. Add boiled rigatoni - add the boiled rigatoni into the saucepan and stir until coated in the sauce.
