Instructions
Step 1
Peal and finely chop onion.
Step 2
Heat oil in a heavy-based saucepan, add onion and cook for 3 minutes until clear.
Step 3
Add stock, lentils and spinach, bring to the boil, stirring occasionally, reduce heat and simmer for 1.5 hours (not that much needed) until lentils are cooked.
Step 4
Whiz up soup with stick blender.
Step 5
Place baguette slices under a hot grill and toast on one side, turn and sprinkle with cheese and grill until golden brown.
Step 6
Float cheese croutons on top of the soup.
