Sweet Potato & Ground Turkey Chili

Make a double batch of this quick ground turkey chili, full of red kidney beans and sweet potatoes, and eat it for lunch the next day or freeze the extras for another night!

Step 1
First, fry the finely chopped onion in oil. Slowly sauté the onions until golden and give it time. This creates a great base for the whole chili. Once the onions are done, add the ground turkey, season lightly with salt and let the meat saute for 3-4 minutes.
Step 2
Once the meat is lightly browned, add all the spices. Cook again for about 2-3 minutes to allow the meat to soak up the flavour. Then you can add the beans, sweet potatoes and crushed tomatoes. Just gently stir and pour in the vegetable broth.
Step 3
Now let the chili cook under a lid for at least 30 minutes on low heat so that it bubbles gently.Stir the chili a few more times during this time and then you can serve. I like to serve this chili in a deep bowl with some rice, sliced avocado and tortilla chips
