Instructions
Step 1
Heat the oil in a large sauté pan over low heat.
Step 2
Add the chillies, garlic & onion and sauté for around 3 minutes.
Step 3
Add the sautéed onion and chilli with the tomatoes to a blender and blend

Add back into the pan and let this cook until the sauce is quite thick, about 15-20 minutes.
Step 5
Meanwhile, bring a large pan of salted water to a boil. Cook the penne in the salted boiling water according to the packet instructions. Drain the pasta, reserving about ¼ cup of the cooking water.
Step 6
Once the sauce has thickened season with salt and pepper.
Step 7
Add in pasta as well as the reserved pasta sauce and toss
Step 8
Garnish with Italian grind and pangratatto

Serve with toasted ciabatta

Pangratatto: Heat some oil in a pan over medium heat. Add 3 tbsp bread crumbs, salt and pepper to taste, chilli flakes and thyme, if desired, and fry until the bread crumbs are crispy (about 3 minutes)
