Step 1
Preheat the oven to 180 degrees Celsius.

Now take the powdered sugar in a mixing bowl or pan. Add semi solid ghee (at room temperature) (also works fine with liquid ghee) or butter (at room temperature).

Mix ghee and sugar very well aka creaming

Now add the dry ingredients – all purpose flour, chickpea flour, semolina, 1 tsp baking powder (1/2 tsp baking soda optional) to the creamed mixture

Bring the whole mixture together to a dough. If the mixture crumbly and your unable to bind it then add 1 to 2 tbsp milk. Do not knead like a roti or a bread dough. Just gather the mixture well to form a cookie dough.

Prepare small portion of dough and place it on the microwave tray (with butter paper or ceased)

Bake the nankhatai in a pre heated oven at 180 degrees celsius (356 degrees Fahrenheit) for 20 to 25 mins till light golden or golden.

Keep on the baking tray for two to three minutes. And it's ready to be served.
