This 1-tray baked orzo is one of my new favourites! I love 1-pot or tray meals because there are minimal dishes afterwards 😂 This one is so comforting and nourishing, yet slightly complex in flavour. It has all the flavours of summer in the South of France with a little twist and is super easy to make. It’s not often that a meal is perfect for both weeknights and entertaining guests!

Ingredients
4 servings
2 Tbspolive oil
1eggplant
small, diced
2garlic cloves
minced
1onion
finely diced
1zucchini
small, diced
1red bell pepper
diced
1 cupbaby tomatoes
½ tspsalt
½ tspchilli flakes
optional
1 tspdried oregano
250gorzo
1 cupchickpea
10black olives
pitted and diced
1 ½ cupsvegetable broth
400gcrushed tomatoes
1lemon juiced
1 handfulfresh basil
Instructions
Step 1
Preheat the oven to 200C
Step 2
Add all the vegetables to an oven-safe dish with olive oil, chilli flakes, dried oregano and salt and cook for 20.
Step 3
Add the orzo, olives, chickpea, vegetable stock and crushed tomato, stir well and bake for 15 minutes or until all the liquid is absorbed. Top with lemon juice and fresh basil.
