Instructions

Step 1
Boil a large red potato until soft enough to easily pierce with a fork and drain OR pierce with a fork, wrap in a damp paper towel and microwave until soft (about 4 minutes)
Step 2
Place potatoes on a baking sheet and smash with the bottom of a glass or the back of a serving spoon
Step 3
Top with olive oil (or oil of choice), preferred seasoning (salt, black pepper, dill and cayenne recommend), shredded cheese, shredded rotisserie chicken, and finely chopped mixed vegetables to taste.
Step 4
Bake 8-10 minutes at 375F until cheese melts and warmed through
