These muffins are the most delicate muffins I’ve ever had! With a crunchy caramelized sugar top, this muffin has the perfect balance of texture and flavour. The aroma of these muffins is to die for.

Ingredients

15 ouncecan pumpkin puree

⅓ cupvegan butter
melted, or vegetable oil

½ cupalmond milk unsweetened

1 ¼ cupsdark brown sugar
lightly packed

1 ¾ cupsunbleached all-purpose flour

1 Tbspbaking powder

0.5 Tspsalt

2 Tspground cinnamon

0.5 Tspground nutmeg

0.5 Tspground ginger

0.25 Tspground cloves

1 cupwalnuts
chopped, raisins, or vegan chocolate, optional

Instructions
Step 1
Preheat oven to 375 degrees F.

Step 2
Lightly grease a muffin tin. If using paper liners, make sure to spray with oil.

Step 3
In a large bowl, add the pumpkin, melted vegan butter or oil, vegan milk, and dark brown sugar. Whisk until combined and smooth.






Step 4
Add the flour, baking powder, salt and spices to the wet mixture. Mix the dry ingredients into the wet ingredients using a spatula or wooden spoon just until combined, not over mixed.








Step 5
Fold in your chosen optional ingredient (if using). Fill the muffin tin 3/4 full. Sprinkle some sugar on the tops so that it caramelizes, and also sprinkle some pumpkin seeds on the tops of the muffins before baking.




Step 6
Bake for 22-24 minutes, or until a toothpick inserted in the middle comes out clean.

Step 7
Remove from the oven, let cool on a cooling rack for 20 minutes before serving.
