Instructions
Step 1
I roasted cauliflower and mixed it with fried onion, steamed kale and a delicious tomato sauce with lots of chilli, garlic, maple syrup and smoked paprika in (I also simmered it for a long time, which made a big difference).
Step 2
I then whizzed up soft goats cheese with 2 beaten eggs and poured it over the top. I grated parmesan style cheese over the top and baked it until brown and crispy. It was GORGEOUS!!
