Instructions
Step 1
Preheat your oven to 180°C.
Step 2
Wash the cherry tomatoes and cut them in halves.
Step 3
Place them on a baking tray and add olive oil, paprika powder, salt and pepper. Bake them in the oven for about 15-20min.
Step 4
Meanwhile the tomatoes are roasting, wash the eggplant and cut it in slices.
Step 5
Get the tomatoes out and instead place the eggplant slices on the baking tray. Brush them from both sides with olive oil and salt.
Step 6
Roast the eggplant slices for about 25-30min.
Step 7
Get the eggplant slices out of the oven. Spread hummus on the slices, add the tomatoes and olives.
Step 8
Fold the slices just as a wrap and fix them with a toothpick.
