Albanian Peasant Food

Probably an offensive name for a recipe… but this was taught to me by an Albanian family who thought I was crazy for thinking it was such an incredible dish. “It’s peasant food from Albania, for when people didn’t have money for meat or produce,” they told me. I asked them what they called the dish, and they said there was no name for it, so they call it Peasant Food. I cannot find a recipe for anything like it online, so I’m recording for my own memory. Since the Orzo is boiled in milk, the dish is creamy, almost like a buttery Mac and Cheese served over toasty French or sourdough bread. Absolutely delicious Balkan carb heaven.

Instructions

Step 1
Preheat oven to 325F

Over low heat, melt butter in a small saucepan with the paprika
Step 3
While the butter is melting, tear or cut the French bread or sourdough into bite-sized chunks or cubes. Place chunks on a parchment lined sheet pan and drizzle with half of the melted butter. Bake for 10-15 minutes or until bread is browned and toasty
Step 4
Place 4 cups of milk in a medium saucepan over medium heat. Once the milk is at more of a simmer than a boil, add orzo, salt and pepper to taste and cook until soft, adding additional milk as necessary to thin out the sauce.
Step 5
Once the orzo is cooked, plate about 10 pieces of bread, top with orzo and remaining paprika butter and serve.
