Step 1
Whisk flour and baking powder together then set aside

To a pan Add butter a pinch of salt sugar milk and water . Whisk then add in the flour and heat on medium heat . Use a silicone spatula to cook the mixture and smooth until it’s a smooth dough then remove from the heat

Mix eggs with a spatula one at a time until incorporated . The dough should be smooth . Spread the mixture on two 24 cm baking pans and bake at 180 c fan / 360 f for about 18-20 minutes then remove and let cool

For the Custard
Step 4
Beat eggs and sugar in a pot then add flour whisk until smooth and add vanilla and milk. I add a pinch of salt also to balance the flavor . Heat on medium heat whisking the whole time to Make sure it doesn’t burn or get lumpy . When it’s thick remove from the heat cover in plastic wrap putting the plastic directly on top of the custard as this will stop a skin forming .

When the custard is cooled beat 120 ml heavy cream in until fluffy .

Add the cream to the top of one of the cake layers ( I keep it in the pan as it’s easier to assemble ) then place the other layer on top . You can chill or serve straight away . Dust with a little powder sugar and enjoy
