Pisang goreng is a plantain fritter that is popular in Southeast Asia, particularly in Indonesia, Malaysia, Singapore, and Brunei.

Ingredients
6 servings
6 tablespoonswholemeal self raising flour
2 tablespoonrice flour
1 tablespooncornstarch
½ teaspoonbaking powder
½ tspturmeric
⅛ tspsalt
6 tablespoonswater
ice cold still or sparkling
6bananas
ripe cooking, peeled and halved, small bananas, varieties of pisang raja, pisang abu or failing that, plantain
Instructions
Step 1
Heat the oven to 220 degrees Celsius and prepare a baking tray with greaseproof paper.
Step 2
In a bowl, combine the flour, cornstarch, rice flour, baking powder and salt. Add the ice water gradually whisking continuously until the right consistency is achieved and the batter is smooth. The batter should coat the banana easily but not be too thick or runny.
Step 3
Cover the batter, refrigerate for 20 minutes.
Step 4
Peel and then cut the bananas in half lengthwise.
Step 5
Coat the bananas with the batter and let them stand for 5 minutes before baking.
Step 6
Place the banana's on the baking tray and bake for approximately 10 minutes until golden brown
Step 7
Serve immediately.
