A traditional Norfolk Island recipe. This is moist cake with very simple ingredients and very easy to make. Would make a great snack and perfect for packed lunches. It is also nice with extra cinnamon on the top or served with greek yoghurt.

Instructions
Step 1
Add the flour and soda to the mashed banana and mix well. Place into a small greased baking tray or dish 7x7 inches (18x18 cms)
Step 2
Bake for 30-40minutes until browned on the top. Then slice into 8 square pieces,
These pilhi may also be made in a muffin or cake tin - around 2 tablespoons mixture per cake)
