Instructions
Step 1
Heat the olive oil in a large pot, saute leeks for 2-3 minutes. Add garlic, continue cooking for 2 minutes. Add quinoa and vegeable broth, season to taste with salt and pepper, cover and bring to a boil. Cook for 5 minutes.
Step 2
Uncover and stir in carrots, cook for 2-3 more minutes. Stir in cauliflower, cook for 2-3 more minutes, then add broccoli. Continue cooking until all vegetables are just fork-tender. and quinoa is thoroughly cooked.
Step 3
Remove from heat, sprinkle with cheese and broil 3-4 minutes. Serve immediately.
