Ingredients
6 servings
12 fl ozcheerios
or any vegan cereal, optional
⅓ cupaquafaba
liquid from can of chickpeas
⅛ teaspooncream of tartar
½ cupsugar
⅛ teaspoonagar powder
¾ teaspoonvanilla bean paste
or vanilla extract
Red vegan food coloring
Blue vegan food coloring
Yellow vegan food coloring
Instructions
Step 1
Combine the chickpea liquid and cream of tartar in a stand mixer equipped with a balloon whisk attachment and whip until it starts to thicken.
Step 2
Mix together the sugar and agar powder.
Step 3
Gradually add the sugar/agar mixture and the vanilla, and continue whipping until thick, about 8 minutes.
Step 4
Line 3-4 cookie sheets with parchment paper.
Step 5
Grab 3 small bowls and spoons and divide up the meringue mixture into the bowls. Using food coloring, make red, blue, and yellow meringue.
Step 6
Grab 2 more small bowls, then using some of the red and blue meringue, mix some purple meringue. Then using blue and yellow, make some green.
Step 7
Preheat oven to 200°F.

Fill 5 small piping bags or ziptop bags (cut off the tip) with each color of meringue.
Step 9
Using Lucky Charms for reference, pipe your tiny marshmallows onto the prepared cookie sheet.
Step 10
How many marshmallows does this make? A lot. Depending on the size of your marshmallows and the spacing between them, you might fill up 2-4 full cookie sheets.
Step 11
Bake/dehydrate the marshmallows for 1-2 hours depending on the size.
Step 12
Turn off the oven and leave the marshmallows in the oven until they return to room temperature.
Step 13
Finally, mix with cereal, and eat with your non-dairy milk of choice!
