Instructions
Step 1
Preheat oven to 425*. Line two baking sheets with foil and grease thoroughly with cooking spray.
Step 2
Bring pot of water to boil over high heat. Add potatoes. Boil 20 min.
Step 3
Fill large bowl with ice water. Transfer potatoes. Soak until cool.
Step 4
Carefully peel potatoes

Grate potatoes on large holes of box grater. Add to large bowl.
Step 6
Crack eggs in small bowl. Whisk until smooth.
Step 7
Add eggs, flour, baking powder, onion powder, and 2 tsp salt to potatoes. Mix well.
Step 8
Scoop 1/4 cup potato. Grease the bottom of measuring cup and flatten mixtures into 3-inch wide circle. Create 16 Latkes - 8 per sheet.
Step 9
Drizzle oil over Latkes. Use 3Tbsp per baking sheet. Sprinkle salt over Latkes. Use 1/8 tsp per baking sheet.
Step 10
Bake Latkes 20 min then flip.
Step 11
Bake another 10-15 min until browned and crisp.
