Instructions
Step 1
Begin with baking the potatoes for 1 hour at 180c/350f until soft.
Step 2
Leave to cool then slice open and scoop out the potato, discard the skins.
Step 3
Place on a chopping board and mash with a fork (or put them through a potato ricer). Sieve over the flour and then create a well in the middle. Crack in the eggs and whisk.
Step 4
Then slowly bring the dough together, make sure not to over knead it and keep adding flour as necessary until you have a soft, even dough ball.
Step 5
Slice the dough in half and then roll out into long strips.
Step 6
Flour a sharp knife to prevent sticking and slice into pillow shapes. If you want to make them look pretty, roll them off a fork as shown in the video.
Step 7
Now prepare the rest of the ingredients, thinly slice the garlic and chop the parsley.
Step 8
Get a pan of salted water onto boil.
Step 9
Once it boils, drop in the gnocchi.
Step 10
Then swiftly get a frying pan on a medium-high heat, add the olive oil and once hot drop in the garlic. Cook for one minute then add the chilli flakes.
Step 11
Once the gnocchi is floating, transfer from the water straight into the frying pan.
Step 12
Cook for a further minute, add a little butter, the parsley and 1/2 cup of the gnocchi water.
Step 13
Season with salt and pepper to taste.
Step 14
Grate over parmesan and enjoy!
