Instructions

Step 1
In a large pan, heat the stock to boiling, then add the potatoes. Cook for 15 minutes until just tender, adding the leeks for the last 5 minutes of cooking time. Drain, reserving 4 tbsp of the stock.
Step 2
Preheat the grill. Layer up the sliced potatoes and leeks with the ham in a shallow heat proof dish and season between the layers.
Step 3
Pour over the reserve stock. Lay the cheese on top, then grill for 5 minutes until the cheese has melted and is beginning to brown. Serve immediately.
Step 4
Chef’s tip - if you don’t have Camembert, used crumbled Stilton, grated Gruyère, or even mature cheddar!
