Was OK, easy to pull together and make plenty of leftovers however I'm not convinced that the flavours worked well together won't be rushing to make again

I made several mods to this - used 1/4 mild red onion instead of the green onions, omitted the parsley bc I planned to serve it on a bed of spinach, and added 1c. edamame for added plant protein. Really excellent, the flavors balance nicely. In the future I may pair it with corn fritters or grilled corn on the cob, but it was fine on its own too.
