Taro Coconut Icecream Mochi

Instructions

Step 1
Cut coconut Melona into cubes and store in freezer
Step 2
Melt 2 taro ice cream in cup (you can microwave on low heat for 1 min)
Step 3
Mix glutinous rice flour with melted taro icecream
Step 4
Cover and microwave on high for 1 min
Step 5
Mix well and then cover and microwave for another minute
Step 6
Mix again and cover, then microwave for 30 seconds
Step 7
Place on floured board (I prefer using tapioca starch)
Step 8
Roll it out and then cut into 6 equal portions
Step 9
Place a cube of coconut icecream in a piece of dough and pinch corners towards the top to wrap it up
Step 10
Place on cling wrap and twist top to hold mochi in place. It should look like a small ball. Keep in freezer for 10 minutes. Enjoy when it’s slightly thawed out (15 mins)
