Instructions
Step 1
Preheat the oven to 350F. Brush a 8 inch ovenproof dish with some of the oil. Arrange one-third of the potatoes in the bottom of the dish, season and lay three slices of pancetta over the top. Sprinkle over a little cheese and arrange another layer of potatoes on the top.
Step 2
Lay the remaining pancetta on top of the potatoes and sprinkle with a little more parmesan and seasoning. Top with the remaining potatoes, season with salt and pepper and drizzle over the remaining olive oil. Press the potatoes down firmly and cover the tin with foil
Step 3
Bake for 30-35 minutes, then uncover and sprinkle with the remaining parmesan. Bake for a further 15-20 minutes, or until golden. Leave to rest for about 10 minutes, then cut into wedges to serve
