disclaimer if i could redo this recipe i would totally skip the buttermilk marinade. this made the impossible meat incredibly difficult to work with and it was very loose. i would instead just dredge in flour and egg replaced x2 and fry normally.
IF you want to marinade in buttermilk I would use frozen premade patties instead of defrosted meat.

buttermilk
2 cupsplant milk
2 TBslemon juice
or ACV or white vinegar
2 TBsbuffalo sauce
1 tspcayenne pepper
1 tspgarlic powder
steaks
flour dredge
2 cupsflour
garlic powder
onion powder
poultry seasoning
cayenne pepper
salt
pepper
lemon pepper
paprika
oregano
tarragon
parsley

chicken bouillon powder

Instructions
Step 1
make buttermilk if using this method. i recommend not marinating and instead dredging in flour and egg replacer twice - see description.
Step 2
let buttermilk sit for 10 minutes
Step 3
marinate steaks in marinade for an hour
Step 4
mix all seasonings with flour until they are visible (flour is not white)
Step 5
thoroughly dredge steaks in flour
Step 6
place in hot oil. oil is hot if a wooden spoon bubbles in the oil
Step 7
remove 3 TBs oil from the pan and drain the rest
Step 8
add flour to the pan and whisk until clumps are gone
Step 9
add milk slowly to the pan
Step 10
add salt and pepper
Step 11
add vegan chicken bouillon
Step 12
serve with mashed potatoes
