You're looking for a sugar alternative in baking, but don't want to commit to products like stevia-based sugar substitutes. Medjool dates can quickly be transformed into a paste that serves as a 1:1 refined sugar substitute. You can use whatever quantity of dates you have on hand to make paste which can be added to your morning tea or coffee. If you're planning to bake a batch of cookies or a cake, you'll need at least 12oz of dates to start with which will yield 1.25 cups of paste.

Instructions
Step 1
Add pitted dates to a pot
Step 2
Add water to the pot so it covers the dates exactly
Step 3
Bring to a boil and remove from heat
Step 4
Allow dates to sit for at least 15 minutes
Step 5
Remove dates from the water, careful to reserve at least 1/4 cup of water
Step 6
Add dates to a high powered blender or food processor
Step 7
Blend until smooth
Step 8
store in an air tight container and refrigerate for up to three months
