Instructions
Step 1
Line the base and sides of a 20cm (8 inch) square tin with baking parchment

Preheat the oven to 160C

Melt the chocolate and butter in a bowl (either in a microwave for approx. 1 min or over a pan of hot water)
Step 4
Weigh the flour and cocoa in a small bowl
Step 5
Whisk the egg and sugar together with an electric whisk for 6-8 minutes until very pale in colour and thick enough to leave a trail on the surface when the beaters are lifted (placing the bowl over a pan of hot water can save time.
Step 6
Pour the chocolate mixture into the bowl and then sieve the flour and cocoa over the mixture. Fold in using a large metal spoon or bowl scraper, cutting through the mixture until all traces of flour are gone, but being careful not to over mix and knock out all the air bubbles.
Step 7
Pour into the tin and bake for 40mins.
Step 8
Leave in the tin until completely cold, then lift out with the paper and cut into squares
