Step 1
While the vegetable is roasting place the 2 tablespoons of extra-virgin olive oil and the garlic, lemon juice, and olives in a mini food processor and puree until well blended.
Step 2
Alternatively, using a fork, you can mash everything in a small bowl until they become a paste.
Step 3
Taste for seasoning, adding salt and pepper to taste and more lemon juice as necessary.
