½ cupbutter
melted then cooled
1 cupsugar
1egg
2egg whites
1 tspvanilla extract
⅔ cupmilk
2 cupsflour
2 tspbaking powder
½ tspsalt
2 cupsblueberries
fresh or frozen

Instructions
Muffin batter
Step 1
Combine melted butter, sugar, and vanilla. Add eggs and egg whites, beat well. Mix in milk.
Step 2
In separate bowl, combine flour, baking powder, and salt.
Step 3
Mix together the dry and wet, but don’t over mix. Add blueberries.
Step 4
Pour batter into muffin cups. One over-full cookie scoop is a good size.
Cream Cheese Topping
Step 5
In a clean bowl, mix together cream cheese, vanilla, and sugar. Cream until smooth.
Step 6
Use a Tbsp to scoop cream cheese onto each muffin cup of batter. Swirl it into the top of the batter.
Streusel
Step 7
In a bowl or food processor, mix together the butter, flour, and brown sugar. Sprinkle over each cup of muffin batter.
Step 8
Bake at 350F for 25 mins. 11-13 mins for mini muffins.
