Step 1
Heat grill pan over high heat. Add eggplants and grill on both sides
Step 2
Place grilled eggplants in a container. Add enough olive oil to soak eggplants, add sliced garlic, salt, and stir. Let sit for at least 4 hours, preferably overnight.
Step 3
Spread hummus on baguette, add olive oil eggplants, and dried tomatoes.
