Cook bacon pieces in a large Dutch oven, remove and reserve pieces leaving behind about 2-3 tablespoons of the grease. Add onions and sauté until translucent. Add potatoes and broth. Add a little water if needed. Cover and cook potatoes until tender (about 10-15 min depending on the size of potatoes). With a blender cream about 1/2 the soups and potatoes, return to the pot lower heat to low. Add the salt, pepper, and heavy cream until desired consistency. Cover and let it warm about 5 min.

Serve with reserved bacon, cheese, and chives
