Ingredients

14 slicesbacon
3 Tbspchives
fresh chopped
2garlic cloves
minced
1jalapeño
large, chopped
4 cupsbaby spinach
1 x 8 ozdiced green Chiles
can
2Chipotle peppers
in Adobe Sauce, finely chopped
12eggs
large
16tortillas
1 cupshredded pepper jack cheese
Olive oil
for tortillas
Avocado Sauce
Instructions
Step 1
Heat a large cast iron pan on medium high-heat on the stove.
Step 2
Cook chopped bacon for 1 minute.
Step 3
Stir in green chiles, jalapeño pepper, garlic, and chipotle peppers for 2 minutes with seasoning. After that add spinach and let wilt.
Step 4
Whisk eggs in a large bowl with a pinch of salt and black pepper. Pour whisk eggs over the mixture and let rest without mixing for 1 minute.
Step 5
Lay the tortillas flat on a clean counter. On top of the tortillas, evenly layer the cheese, and the egg mixture.
Step 6
Then layer another tortilla on top. Using a fork close the tortilla ends.
Step 7
Heat some olive oil in a large skillet over medium heat. When the oil simmers, place the quesadillas in.
Step 8
Cook until golden on each side. Repeat same process with remaining mixture to get 8 quesadillas. Serve with avocado sauce, enjoy.
Step 9
In a blender blend ingredients for avocado sauce. Serve on quesadilla and enjoy!
