Instructions
Step 1
Line baking sheet with foil and spray with veg oil. Toss potatoes, oil, salt, pepper in a bowl. Arrange in a single layer on sheet and cover tightly with foil.
Step 2
Adjust oven rack to middle and place potatoes in cold oven. Turn oven to 425 and cook 30 min.
Step 3
Remove foil cover. Continue cooking until bottom edges of potatoes are golden brown, 15-25 min.
Step 4
Flip potatoes and cook until bottom edges are golden brown, 18-22 min. Cool 5-10 min before serving.
